Capsaicin process
Capsaicin, also known as capsaicin and capsaicin, is the active ingredient of capsicum. It is irritating to mammals, including humans, and can produce a burning sensation in the skin. Capsaicin and its related compounds are also called capsaicin like substances. They may be the secondary metabolites produced by pepper to prevent herbivores from gnawing and fungi from parasitism. Generally, birds are insensitive to capsaicin like substances. Pure capsaicin is a water repellent lipophilic, colorless and odorless crystalline or waxy compound.
