Lactic acid process
The industrial production strains of lactic acid fermentation mainly include bacteria and Rhizopus oryzae.
Bacterial lactic acid fermentation can not directly use starchy raw materials. Starch must be liquefied and saccharified into fermentable sugars before it can be used by lactic acid bacteria. Lactic acid can be produced through homotypic or heterotypic lactic acid fermentation and bifidous fermentation.
Rhizopus oryzae is rich in amylase and saccharifying enzymes, which can directly use starch or sugar raw materials to produce L-lactic acid.
